Recipe: Wheat Thai Peanut Soba Salad
Ingredients
- Whole Wheat noodles, prepared according to package directions (thawed and ready to use, boil or microwave) - 16 oz
- Red onion, sliced - 1/2 cup
- JalapeƱos, sliced - 1/2 cup
- Cucumber, seeded and sliced - 1/2 cup
- Sweet chili sauce - 1/2 cup
- Carrots, shredded - 1/4 cup
- Peanuts, shelled - 1/4 cup
Preparation
Combine all ingredients in a mixing bowl and toss to incorporate.
Refrigerate for up to 4 hours before serving.
